Ruby chocolate is a variety of chocolate introduced in 2017 by Barry Callebaut, a Belgian- Swiss cocoa company, It has been in development since 2004 and in 2015. It was first revealed at shanghai trade show in September 2017,then they debuted the first publicly available version in japan, moving on to Europe in mid- 2018, and then US in 2019.
Whats is Ruby chocolate ?
The ruby cocoa bean is not actually a new type of cocoa, nor has been genetically modified, at least according to callebaut.
Where does it come from ?
The so-called ruby cacao comes from Brazil, Ecuador, and ivory coast, but callebaut has not been as open regarding the origin of ruby chocolates other ingredients: cocoa, butter, sugar, citric acid, and milk, as well as emulsifiers
So no matter what the answer, pink cacao pods are not the answer that lead us to believe that it has something to do with how he treats these ruby cacao beans after harvest.
Based on a long journey in the chocolate industry as a chocolatier i believe that the ruby chocolate is 100% a marketing term and just another sweet treat with an unusual appearance.
